Question:Where can I ßnd the most up-to-date and comprehensive list of acid- and alkali-forming foods?
Answer:What effectively makes a food alkaline forming is the presence of the minerals calcium, magnesium, potassium and sodium. Fruits and vegetables are very rich in potassium and magnesium and are therefore alkaline (except asparagus, cranberries, plums and olives). What makes a food acid forming is the presence of amino acids.

So proteins such as meat, fish, eggs, cheese and nuts (except almonds) are acidic, and grains such as rye, oats, wheat and rice slightly less so. Butter or margarine, sugar, tea and coffee are considered neutral. In terms of lists, I compiled the one below, reproduced from the Opdmum Nutrition Bible, on the basis of all the research to date.
